Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 cup uncooked long-grain white rice
  • 2 cups chicken broth
  • 1 can (10.5 oz) cream of mushroom or cream of chicken soup
  • 1 cup frozen mixed vegetables (peas, carrots, corn)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon salt (adjust to taste)
  • ½ teaspoon black pepper
  • ½ teaspoon paprika
  • ½ cup shredded cheddar cheese (optional, for topping)

Instructions

Step 1: Prepare the Slow Cooker

Spray the inside of your slow cooker with non-stick cooking spray or lightly grease it with oil.

Step 2: Add Ingredients

Place the uncooked rice at the bottom of the slow cooker. Pour in the chicken broth and mix in the cream of mushroom (or chicken) soup.

Step 3: Add Chicken & Seasonings

Place the chicken breasts on top of the rice mixture. Sprinkle garlic powder, onion powder, salt, pepper, and paprika over the chicken.

Step 4: Slow Cook

Cover and cook on low for 6 hours or high for 4 hours, until the chicken is fully cooked and the rice is tender.

Step 5: Shred Chicken & Add Veggies

Once the chicken is done, remove it from the slow cooker and shred it using two forks. Stir it back into the rice mixture along with the frozen vegetables.

Step 6: Add Cheese & Serve

If using cheese, sprinkle it on top and let it melt before serving. Enjoy your budget-friendly slow cooker chicken and rice!

Notes

  • You can substitute brown rice, but increase the broth to 2.5 cups and extend the cooking time.
  • Swap chicken breasts for chicken thighs for a more budget-friendly option.
