Description

These hearty and delicious breakfast burritos, inspired by Costco’s version, are filled with fluffy scrambled eggs, crispy bacon, seasoned potatoes, and melted cheese, all wrapped in a warm tortilla. Perfect for a quick breakfast on the go or for meal prep!

  • 6 large flour tortillas
  • 6 large eggs
  • ½ cup milk
  • 1 cup shredded cheddar cheese
  • 1 cup frozen hash browns or diced potatoes
  • 6 slices bacon (or turkey bacon)
  • ½ cup cooked breakfast sausage (optional)
  • ¼ cup chopped onions (optional)
  • ¼ cup diced bell peppers (optional)
  • 2 tbsp butter or oil
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp garlic powder
  • ½ tsp paprika

Instructions

  • Cook the Bacon & Sausage: In a large skillet, cook bacon until crispy, then drain on paper towels. If using sausage, cook until browned. Set aside.
  • Prepare the Potatoes: In the same pan, add a little oil and cook hash browns or diced potatoes until crispy and golden brown. Season with salt, pepper, and paprika. Remove from the pan.
  • Scramble the Eggs: In a bowl, whisk eggs with milk, salt, and garlic powder. Melt butter in a pan over medium heat, then add the eggs. Cook, stirring occasionally, until soft and fluffy. Remove from heat.
  • Assemble the Burritos: Lay out a tortilla, add a portion of eggs, potatoes, bacon (or sausage), shredded cheese, and any optional veggies.
  • Wrap & Seal: Fold in the sides and roll tightly into a burrito. Repeat for all.
  • Toast the Burritos (Optional): Heat a dry skillet over medium heat and toast each burrito for 1-2 minutes per side until golden brown and crispy.
  • Serve or Store: Enjoy immediately, or wrap in foil/plastic wrap and store in the fridge for up to 3 days. For longer storage, freeze for up to 3 months.
