Description

Inspired by Red’s All Natural Breakfast Burritos, this homemade version is packed with fluffy eggs, seasoned potatoes, melty cheese, and your choice of sausage or plant-based protein. A delicious, protein-packed breakfast that’s freezer-friendly and perfect for on-the-go mornings!


Ingredients

  • 6 large flour tortillas (whole wheat or regular)
  • 6 large eggs
  • ½ cup milk
  • 1 cup shredded cheddar or Monterey Jack cheese
  • 1 cup frozen hash browns or diced potatoes
  • ½ cup cooked breakfast sausage or plant-based sausage
  • ¼ cup chopped onions (optional)
  • ¼ cup diced bell peppers (optional)
  • 2 tbsp butter or oil
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp garlic powder
  • ½ tsp smoked paprika

Instructions

  1. Cook the Sausage: In a large skillet over medium heat, cook the sausage (or plant-based sausage) until browned. Remove and set aside.
  2. Prepare the Potatoes: In the same pan, add a little oil and cook the hash browns or diced potatoes until crispy. Season with salt, pepper, and paprika. Remove from the pan.
  3. Scramble the Eggs: In a bowl, whisk eggs with milk, salt, and garlic powder. Melt butter in a pan over medium heat, then add the eggs. Cook, stirring occasionally, until soft and fluffy. Remove from heat.
  4. Assemble the Burritos: Lay out a tortilla and add a portion of scrambled eggs, potatoes, sausage, shredded cheese, and any optional veggies.
  5. Wrap & Seal: Fold in the sides and roll tightly into a burrito. Repeat for all.
  6. Toast the Burritos (Optional): Heat a dry skillet over medium heat and toast each burrito for 1-2 minutes per side until golden brown and crispy.
  7. Serve or Store: Enjoy immediately, or wrap in foil/plastic wrap and store in the fridge for up to 3 days. Freeze for up to 3 months for a quick meal option.
