Ingredients
- 2 cups leftover rotisserie chicken, shredded
- 1 tablespoon olive oil
- 1 small onion, diced
- 2 carrots, sliced
- 2 celery stalks, sliced
- 3 cloves garlic, minced
- 6 cups chicken broth
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- ½ teaspoon salt (adjust to taste)
- ½ teaspoon black pepper
- 1 cup uncooked egg noodles or rice
- 1 tablespoon lemon juice (optional, for freshness)
- Fresh parsley for garnish (optional)
Instructions
Step 1: Sauté Vegetables
In a large pot, heat olive oil over medium heat. Add diced onion, carrots, and celery. Sauté for about 5 minutes until softened. Add minced garlic and cook for 1 more minute.
Step 2: Add Broth & Seasonings
Pour in the chicken broth. Stir in dried thyme, oregano, salt, and black pepper. Bring to a simmer.
Step 3: Add Chicken & Noodles
Add the shredded rotisserie chicken and uncooked noodles (or rice). Let simmer for 10-12 minutes until the noodles or rice are tender.
Step 4: Add Lemon Juice & Serve
Stir in lemon juice for extra freshness. Taste and adjust seasoning if needed. Garnish with fresh parsley and serve hot!
